Chicken Cordon Blue Recipe

I sometimes get stuck in a cooking rut. I have a handful of dishes that are my go-to-staples and I make them on a rotating schedule. On nights like tonight I get the feeling that making dinner is like being on an episode of Food Networks Chopped. It’s all based on the food that I stock in my pantry and the amount of time and effort I feel like expending on a given night. Right now the budget is a little bit tight so I’m trying to come up with different things to do with what we have in the freezer and with left overs from other meals. Tonight it was between Pork Chops or Chicken Breast as the main entree and the hubby had the final vote of Chicken.

Start the clock at 45 minutes. Game on. Time to make a meal.

Chicken Cordon Blue Recipe



Ingredients for Chicken Cordon Blue

  • 2 large defrosted Chicken Breasts
  • 2 slices of Ham
  • 3 TBLSPN Chevre (Fresh Goat Milk Cheese)
  • 1/4 LB Swiss Cheese


  • Preheat oven to 400 degrees.
  • Tear off a large piece of parchment paper and place it on your cutting board. Put the chicken toward the middle of the parchment paper, fold it over and cover the entire chicken breast. Using the flat size of the meat tenderizer and tenderize the meat until it’s 1/4″ inch thick or less. Don’t pound too hard or it’ll fall apart when you try to wrap the breasts.
  • Take half of the chevre and spread it thinly on 1/3 of the flattened chicken breast leaving 1/2 of an inch to the edge of the chicken.
  • Cut the ham slices into 2 inch wide strips, and place on top of the chevre. Leaving 1/2 of an inch of free space to the edge of the chicken breast.
  • Cut the swiss cheese into 6 slices. Place two slices of swiss cheese on top of the ham.
  • Fold the chicken over and roll the breast together and place in the deep dish pan. Use tooth picks to keep the breast in rolled form.
  • Place it oven and bake for 40 minutes or until the chicken is cooked all the way through.
  • Change the oven setting to broil. Place the additional two slices of cheese on top of the chicken breasts and broil for ~2 1/2 minutes or until the cheese is crisp and golden on top of the breast. Pull out of oven and let cool prior to serving.
