Chia Energy Bars Recipe

I’ve been testing a few different energy bar recipes using chia seeds and so far this one is my favorite. It’s almost like a combination of a Fig Newton and a Lara Bar.
The great thing with this recipe is that you can use the date and fig puree with chia seed gel as a base and then add in nuts and seeds. For the energy bars in the picture above I mixed in 1 cup of cashew pieces, 1/2 cup of sunflower seeds, and 1/4 cup of flax seed.

No-Cook Chia Seed Energy Bars Recipe:


  •  8-10 Dates
  • 1 cup dried figs
  • 1/4 cup Chia Seed Gel
  • 1/2 cup Chia Seeds
  • 2 TBLSPN Coconut Butter
  • 1/2 TSP Hazelnut oil or Vanilla Extract
  • Optional: Shredded Coconut, Chocolate Chips or Chocolate Powder, Coco Nibs, rolled oats, dried fruit and/or other nuts


  • Remove pits from dates and place dates, figs, coconut butter and chia seed gel in blender or food processor. Pulse until it forms a thick paste.
  • In a medium bowl mix the fig/date paste, chia seeds, and optional ingredients until it well blended and has formed a thick dough.
  • Place on parchment paper and either roll into little bit size balls, or roll out to form bars.
  • Put in fridge or freezer to get a chewy texture.
