Strawberry Mint Bruschetta Recipe

Strawberry Mint Bruschetta with Balsamic Vinegar ReductionI am ready for summer. Let’s just straight past spring and into summer when my favorite fruits and veggies are in their peak season… they are bright fresh and full of flavor. This morning I was channeling my inner summer sunshine and decided to make a sweet appetizer to take advantage of the sale on Strawberries at our local QFC. Instead of having a tomato based bruschetta as an appetizer I decided to use Strawberries and accent them with flavors that invoke summer. If you want a lower fat alternative use Neufchatel cream cheese spread instead of chevre. This is a quick and easy way to satiate your sweet tooth with an item that is healthy, low calorie and low fat.

This makes an excellent appetizer, but could easily work as a dessert.

Strawberry Mint Bruschetta with Balsamic Reduction


  • 1 loaf of French Bread (sliced into 1/2 inch thick slices)
  • 1/2 lb strawberries
  • Mint
  • 1 small package of Chevre (Goat Cheese… Honey Flavored Chevre is awesome with this recipe)
  • Balsamic Vinegar or pre-made reduced Balsamic Vinegar

Sliced Strawberries with Chopped Mint


  • If the french bread isn’t sliced, slice it into small pieces between 1/2 to 1 inch thick.
  • Wash and slice the strawberries. Place in a small bowl. Rinse and chop the mint into small pieces and add to the bowl of strawberries. Blend together.
  • Spread the chevre on top of the sliced french bread. Place a spoonful of the strawberry mint mixture on top of each slice.
  • Drizzle with balsamic reduction. If the balsamic reduction isn’t sweet enough add a drizzle of honey. Enjoy!

I hope you enjoy and that you like it as much as we did. I served this as a pre-dinner appetizer to go along with my Butternut Squash Risotto and they ate it as quickly as I could make it.
